Afghan Biscuits

It's sometimes difficult to describe the tasks that my job consists of, but today it is a rather enjoyable one.. Perfecting the chunky, iced, chocolate Afghan Cookie for an upcoming cafe being held at an event we are having. But here is my first, and hopefully only, attempt to a recipe i have adjusted. 


Ingredients
200 grams butter, softened
1/2 cup brown sugar
1 teaspoon vanilla essence
2 tablespoons of cocoa powder
1 1/2 cups plain flour
1 cup cornflakes



  1. Preheat oven to 180C and line trays with greaseproof paper.
  2. In a mixer cream butter and sugar, add vanilla essence
  3. Add flour and cocoa until combined.
  4. Add cornflakes on low speed and mix until just combined.
  5. Roll dough into balls and place onto prepared trays. (i made 10 large ones) Press lightly with a fork.
  6. Bake for 15-20 minutes.



The real test is if they are able to be frozen in large batches, unfrozen then iced and still tasting deliciously fresh! I will keep you posted.

maturity

It has certainly been a while since the i posted something. Starting a blog seemed like a good idea at the time. But obviously i am not quite up to the 'blogging-world standards' just yet. i think to be able to say 'i blog' you must regularly post something, but in my case i don't think that will ever happen. It is merely another form of procrastination. Just so many other things to do, including the ever-important pinterest-ing which has really taken off in my life. But for the lovely Steph Magee, who has been kindly reminding me to do so, i will post a few updates.

Having moved back home, however, there are pros and cons which influence my baking habits; a con being a really small kitchen filled with 5 other people, 2 cats and a dog - all factors which contribute to my lack of. On the other hand, there is a huge difference between a flat pantry and a mum pantry. Just saying.

So, to post a few 'recents' from my life. I turned 21 last month and had a splendid wee party, thanks to many others who made the delicious treats. Here are some pics..
